Delicious Quinoa Salad: A Must-Have for your Meals

Quinoa Salad
This quinoa salad is so fresh and delicious, perfect for a dinner party at home or picnic in the park. A few months ago I had some family over for a bbq and needed something healthy to make for a guest with dietary restrictions. I had parsley growing and thought I would whip up a quick tabouleh salad but after searching my cupboards for bulgar, I remembered I threw it out. So then I decided to use tricolour quinoa instead and improvised a bit, and what came about is just delicious.

Fresh Quinoa Salad
Ingredients
2 1/2 cups of cooked quinoa
2 1/2 cups of chopped parsley
10-15 mint leaves finely chopped
1 medium sweet pepper (I used a yellow one, use whatever colour you want)
1 Small onion finely chopped
2 large cloves of garlic finely chopped
1 large tomato chopped
1/2 cucumber
1 large avocado chopped
juice of 2 large lemons
2 tablespoons of olive oil (optional)
salt and pepper to taste

1.Cook the quinoa as per package instructions. The measurements above are just guidelines, if you absolutely love avocado, add more, or if you hate peppers, omit them. Cool down the quinoa to room temperature.
 
2. While the quinoa is cooling down start chopping the vegetables. I throw them all into the bowl with the cooled quinoa, also add the parsley and chopped mint.
 
3. Add the juice of two lemons, the oil if you are using it and salt and pepper to taste, and mix it all up. The lemon will prevent the avocado from browning. I like to put it in the fridge for an hour at least so that the vegetables have some time to release their juices. Bon Appetite!

    This looks delicious and really healthy but my only problem is I don’t like avocado so i’d have to substitute it for something else

    This sounds so good, except for the avocado (unless it’s in guacamole, YUM)… wonder what else could be used? Maybe cherry tomatoes? Or is that weird with these ingredients?
